For HDRP you have to pack metalic smoothness (inverted roughness) in mask map..
For URP you just have to invert roughness (alpha channel), as unity ask for smoothness and not roughness (like sketchfab). For URP there is a video on youtube that can help you: youtube.com/watch?v=jZtB-U5V2dE

I heard they do that on purpose to give the suspect a feeling of entrapment and that the only way to escape is to get through the interrogator first. Additionally they usually place the interrogator in the seat closest to the door, to intensify this feeling.

@kayyeh1 by default sketchfab will render each material as double sided but you can switch it to one sided easily:
